I love this recipe, but I made some major modifications to it. I'd never used more than 1 egg in any mac and cheese recipe before and the macaroni/egg ratio seemed low so I doubled the macaroni. Also, I love caramelized onions in mac and cheese along with panko bread crumbs so I added both. I also cut out a quarter the amount of butter and voila! Not cheese by any means, but the basic tasty vibe. For a very simple cottage cheese or ricotta substitute, you can blend or mash some Firm Silken Tofu with a dash of lemon juice. Silken Tofu can substitute cheese in many recipes, replacing cottage cheese or ricotta in dips, sauces, smoothies, pies, and pasta dishes.
Check out that bright orange up there. That color is indicative of a much loved processed food from everyone's childhood.
Yes, Kraft Macaroni & Cheese has produced that school bus likeness with a little help from Yellow #5 and #6. I know for a fact that many love the orange chalky dust that represents 'cheese' in the box.
I was cruising around my local grocery store when I couldn't help but notice all the college students in their pajamas. Their carts will filled with ramen, frozen pizza, and boxed macaroni and cheese. Why they walk around in pajama bottoms is a mystery to me - but I KNOW why they buy boxes of mac and cheese. It is cheap, filling, and fast to make.
The only cooking skill it requires to make it is boiling water. Hey, even I could do that at the age of 20.
I decided to try and see if I could add some nutritional upside to the classic. First, Kraft made it easier for me by producing this:
That's right, people! They added 50% whole grain to their recipe and frankly you cannot tell the difference. A wee bit of fiber is a big leap forward in the boxed food arena.
I decided to nix the butter or margarine (90 calories per tablespoon) and go with 1/2 cup of 2% milk fat cottage cheese. There are a bunch of choices when it comes to cottage cheese - 4%, 2%, 1% and 'no fat' cottage cheese can be found in the dairy aisle.
It should taste like the original version so I went with 2%. Finally, I added 1/2 pound of fresh tomatoes for color and to bulk up the dish. Tomatoes are a good complement to the salty dried cheese.
Now, you cut the fat, added a fruit, and have MORE to eat per serving. Are you going to like this? Yes. Is it the healthiest recipe in the world? No.

Butter, a common ingredient in many cake and pastry recipes, is most commonly replaced with oil or margarine. Using oil makes a recipe moister or slightly more likely to crumble, while margarine offers a minimal flavor difference. If you wish to add a unique flavor twist to your recipes and increase their creaminess, you can replace some of the butter in a recipe with cream cheese. Quicken 2017 free download full version. Since cream cheese is not always a good substitute for butter, you will have to try different ratios to perfect your recipe.
Spread cream cheese on a pastry, bagel or slice of toast as an alternative to butter. Cream cheese offers similar flavor-enhancing properties due to its high fat content. Though it tastes different than butter, it offers a pleasant creaminess.
Replace the butter in a cream sauce recipe with half cream cheese and half vegetable oil. For example, if you are making Alfredo sauce and it requires 1 cup of butter, use 1/2 cup of cream cheese and 1/2 cup of oil. The cream cheese increases the creaminess of the sauce. If the sauce already calls for cream cheese or cream, you may wish to reduce the amount of cream cheese or cream you add to the recipe.

Add cream cheese to a pastry, cookie or cake recipe by mixing it with oil. Add the liquid to the dry materials in the recipe. Adding cream cheese to a pastry recipe gives it a flavor more similar to a tart and may have a cheesy taste. In most cases, you will want to use a ratio of 25 to 50 percent cream cheese and 50 to 75 percent oil. Replace all of the butter with this oil and cream cheese mixture. If the recipe calls for 1 cup of butter, use 3/4 cup of the mixture.
